Not enough for a meal so we served these as a side to grilled pork tenderloin. Thanks to Snoochee I diced the peaches (great recommendation). Teenager loved it and wanted more. Will definitely make again and want to try pears or apples too.

Made these for a late breakfast and they are delicious - I want to put the honey-lime sauce everything! The only change I would make is to dice the peaches. Sliced, they like to squirt out of the quesadilla as you cut or bite down. Otherwise, this is an amazing combination of flavours. I will definitely make it again - maybe with caramelised onions as suggested by a previous review...

I made this tonight and loved it. I made some alterations...but only b/c I forgot something at grocery store. I did not have chives so I caramelized sweet Videlia onion, put peaches on top of onions right before pulling off the heat, let them sit a few minutes then placed in a bowl with the brown sugar. I accidentally misread amount of brown sugar and did tablespoon. Still great, but next time will use the tsp as recipe says. My fault there. I loved the recipe. I used a supermarket brie too...not a triple cream or something I would use if paring with fresh fruits and bread, and it turned out just fine. I will definitely make this again. Loved the unusual pairing of ingredients. The sauce was interesting...very sweet. I think I will add more lime juice next time and maybe a kick of hot pepper...I like hot and sweet together.

I gave it 3 stars because I couldn't find peaches or nectarines ANYWHERE in all of Las Vegas! Lol. I used Pears. My 8 year old ate it, the husband ate it, and my picky 5 year old just wasn't having it. It taste like I was having a snack in France....a nice switch up from regular quesadillas. Hopefully I can try this with peaches in the summer. The honey lime sauce was yummy.

Unique, fresh flavors! I made the recipe first,as an appetizer and assumed it would be a pick-up food~ disappointed with the messiness. BUT this recipe is so flavorful that it's worthy of a knife & fork. I do like it better with whole wheat tortillas, and definitely use the dipping sauce. Love to serve this recipe as a light summer meal paired with rice, (add a little lime zest to the rice as well) and with peach tea over crushed ice. YUM!

Made this yesterday afternoon. Used fresh peaches which can be a chore as I had to blanch them so I could peel them first. Also, as no one likes the rind on the brie I removed that though there is no specific direction to do so. I was using a supermarket Brie; perhaps if I had been able to get a better Brie I would have left it on. It is quite easy to make, and while the pairing of ingredients is somewhat unconventional, they do seem to work together. Adult daughter liked them better without the sauce-she thought it was too sweet. I did used more Brie than indicated as we like cheese and everyone agreed they liked the ones with more cheese better. They are messy to eat (the peaches tend to fall out when you take a bite) so would not be good at a dinner where people are dressed up.

This was definitely yummy -- my only complaint is that it was a little difficult for guests to eat. I will make it again but just for my husband and me, so we can use our fingers and be messy :-)

Love this appetizer! Big fan of CL's arugula, apple, and brie quesadillas in the fall, so was excited for a summer variation. Used nectarines because we had them on hand. The honey-lime sauce is what really makes the dish.

I made these for girls night as an appetizer. They were super easy and were a welcome lighter version to most quesadilla fillings. I did bake each half on a lightly greased baking sheet in the oven as I hate fussing with things when people are over. I took it a little too far and tried light brie inside (it was on sale). The sauce is awesome. I would not recommend sacrificing the flavor and texture of regular brie. Great recipe would make again.

Loved the tastes in this appetizer. Wonderful for summer.The honey-lime dipping sauce was a great compliment, I would definitely NOT leave it out. I made the recipe just as written. I tried to serve a couple quesadillas by cooking two tortillas sandwiched together, but the brie made the tortillas slide a bit. The quesadillas were much neater when folded. Will definitely make again.

Wowzer. These were dee-lish. I substituted perfectly ripe white nectarines for the peaches and didn't bother to peel them. Next time, I'm going to grill these with indirect heat on THE BBQ.

These were good, but I don't really see the need to use brie here (unless one used a LOT more than indicated in the recipe) as the flavor of the cheese seemed to get buried under the taste of the peaches. I will probably make these again with a different cheese; I think they would be just as good with another, less expensive white cheese like queso blanco or even Monterrey Jack.

I did not make the sauce but the quesadillas were delicious. I loved the combination of fruit and cheese melted together. Made these for a dinner party and were a great appetizer/dessert. Very simple to make, I popped them in the toaster oven as needed to keep them warm.

Wonderful flavor. We added grilled pork slices to add substance and turn them into a main dish. With side dishes of baked okra and squash patties, one was plenty. I loved how the sauce brought out the special flavor of the peaches and cheese. I would definitely serve again and even use (wo pork) as a party appetizer.

Delish!!! I made these for lunch for my son and I and we both loved them! My daughter wouldn't try them. She loves Brie but not peaches so I made her one with a Pink Lady apple sliced up and she loved it. They were not messy at all. I followed the recipe exactly and used peaches that were ripe but firm. I drizzled the honey lime sauce over the quesadillas. Perfect!! Will absolutley be making these again..soon!

These were Sooooooo good!!! Although I strongly disagree with this being posted as a "dinner tonight"! The portion was extremely small for dinner. However, I would make this again for an appetizer! I used whole wheat tortillas and goat cheese Brie.

My family and I are normally open to trying new and interesting recipes. Based on the reviews and knowing that my oldest son and I love brie, I thought this would be outstanding. To our disappointment, it didn't deliver the way we had hoped. Like one of the other readers, I thought they were a little sloppy to eat....perhaps I used too many peaches. My son doesn't care for lime so he didn't like the sauce. I, on the other hand, thought the sauce helped the flavor. There are many good recipes out there so unfortunately I don't think I would be making this again.

I gave it four stars because I loved the quesadillas but disliked the sauce a lot. I didn't put sugar in the quesadilla because peaches have enough sweetness. I heated up the tortilla in the pan for a little and then I added everything. Tortilla didn't get soggy at all. It was unreal. I cannot wait to make them again.

I made this with mangoes instead of peaches and it was the hit of the party. Everyone really loved the sauce and were surprised it was so simple. A great party app, so simple yet elegant. The key is not to overload the tortilla. If you're cutting them into 3 pieces, then place 3 pieces of cheese and 3 of fruit in a fan shape on the tortilla half. I cut them with a pizza cutter which worked great.

The peach and brie went surprisingly well together. I didn't care for the honey-lime sauce and won't make it next time. My only real complaint was how MESSY this dish was to eat! I think this was in large part due to the peach I used. Next time I will be sure to use a very,very firm, under-ripened peach to avoid this messy disaster! I might even try grilling the peach slices first to dry them out a little more... Overall this recipe has great flavor, but it was a little too sloppy for my liking and I wasn't impressed by the sauce.

This is pretty good and easy to prepare â next time I make this I will place a bit more brie in the tortilla, as I didnât really taste it and I didnât serve it with the sauce, so it may have been better if I had done so, nonetheless, both my husband and I enjoyed it!

I stumbled on this recipe looking for a peach crisp recipe. My tree is laden with peaches right now, so I thought I'd give this a try. The rest of the reviewers were correct. This is DELISH!!!! I plan to serve it as an appetizer for an upcoming bridal shower. Amazing! It seems much more chic, than the easy amount of effort it took to make....

This was really great. I love the taste of brie with the ripe peaches. I made this for a late afternoon appetizer when we had a late dinner planned. Served with a nice pinot grigio. This will be a summer redo recipe.

This is an easy recipe with excellent results. We've made it several times and everyone loves it. We grilled it last time and sliced it up and served it on a cutting board with sauce and sliced chives...fun and great for summer entertaining!

YUM, YUM, YUM! THese were so flavorful and so easy! I probably used a bit more brie than stated, (one wedge of ile'd France). Also used a few more chives and assembled them on whole wheat tortillas. Instead of a skillet, I used a non-stick grill pan for a nice presentation. Served with the sauce and topped with chives and lime zest. Excellent!

These are absolutely phenomenal. I can't understand why anyone would put these flavors together, but they electrify the tastebuds. They brown VERY quickly, so be careful! The sauce is the perfect addition. BIG hit!
