This delicious cucumber mint salad is so good, it’s almost hard to tell if it’s a side dish or dessert! It’s naturally sweetened with fresh cut strawberries, combined with cucumber and mint. Serve this strawberry cucumber salad anytime you host a dinner party to add an elegant touch to your meal.

All I know is that it’s summer perfection and I can’t stop eating it. It’s totally refreshing during these HOT(TTTT!!!!) summer days and eating strawberry mint salad is a great way to cool down. Another one of my favorite summer recipes are these flavorful salted watermelon margaritas!

Just a fewof summer’s favorite ingredients and 5 minutes are all you need to whip this bad boy up. You don’t even need dressing, but you can drizzle on some strawberry balsamic vinaigrette if you want to.

Strawberry and cucumber salad would no doubt be a hit at any BBQ or covered dish supper… are covered dish suppers a Southern thing?? Plus, it will be a nice light contrast to the mayonnaise-laden salads that people usually bring. You win.
